Quick and Fragrant Veggie Fried Rice

We love nothing more than tucking into a bowl of fragrant and zingy fried rice. This is super-fast, packs in loads of veg and the crispy fried egg tastes amazing smothered in our Sweet Chilli Sauce.

Serves: 2
    • 200g brown rice, cooked
    • 1 tbsp. vegetable oil
    • A thumb of fresh ginger
    • 1 clove of garlic
    • 3-4 shallots
    • A handful of chopped green beans
    • ½ a carrot, cut into matchsticks
    • Handful of frozen peas
    • 3 spring onions, sliced diagonally
    • Blue Dragon Light Soy Sauce
    • 1 egg
    • Blue Dragon Original Sweet Chilli Sauce
    1. Firstly, cook your rice as normal, fluff with a fork and set aside to cool (or if you have the time, cook the night before).
    2. Get your wok or frying pan nice and hot with a tablespoon of oil. Fry the shallots, ginger and garlic (careful not to burn the garlic or it will taste bitter), then add your veg to the wok. Stir fry for 2 minutes then add the cooked rice to the pan.
    3. Splash a tablespoon or two of Blue Dragon Light Soy Sauce and a good squeeze of Blue Dragon Sweet Chilli Sauce into the wok and toss to combine the ingredients.
    4. Serve the rice into bowls and add a splash more oil to your wok. Crack in an egg and fry until the sides are brown and crispy but the yolk is still runny. Top your rice with your lovely fried egg and drizzle with more Blue Dragon Sweet Chilli Sauce. A delicious and satisfying bowl packed with Asian flavour.
