Mixed tempura

A light and crispy batter that can be applied to meat, fish or vegetables to create a perfect snack or canape.

Serves: 4
    • Some seafood (mixed), such as prawns, squid, fish
    • Some vegetables (mixed), such as mushrooms, peppers, baby sweetcorn, asparagus, green beans and sweet potato
    • 1 packet Blue Dragon Tempura Batter Mix
    • 225ml water, ice cold
    • Some vegetable oil, for deep frying
    • Blue Dragon Sweet Chilli Sauce or Blue Dragon Light Soy Sauce for dipping
    1. Wash the seafood and vegetables; cut peppers, squid, fish, and sweet potato into strips, leave the rest of the ingredients whole.
    2. Combine the Tempura Batter Mix with the water and stir well to remove most of the lumps. Ideally use the batter immediately and do not leave to stand.
    3. Heat the oil in a wok or deep fat fryer to 160ºC/325ºF.
    4. Dip vegetables and seafood into batter and deep fry in batches for 2-3 minutes or until golden brown.
    5. Dry on a rack and serve immediately.
    6. Tastes great dipped into Blue Dragon Light Soy Sauce or Sweet Chilli Dipping Sauce.
