This classic noodle dish is so easy to make and packed with fresh flavours and juicy pork- no need to order a takeaway!

4 nests Blue Dragon Medium Egg Noodles
2 tbsp. vegetable oil
500g pork fillet, cut into thin strips
1 onion, roughly chopped
1 red pepper, deseeded and sliced
2 yellow peppers, cored, de-seeded and cut into small chunks
1 large courgette, very finely sliced
2 sachets Blue Dragon Chow Mein Stir Fry Sauce
Cook the Noodles according to pack guidelines. Drain and set aside.
Take a wok and heat half the oil until just below smoking point. Add the pork and stir fry for 3-4 minutes or until tender. Remove and set aside on absorbent paper.
Take the remaining oil and add the onion, red pepper, yellow pepper and courgette and stir fry for 3-4 minutes or until the vegetables are cooked through but with a crunch remaining.
Return the pork, Noodles and Chow Mein Sauce to the wok and toss to coat. Serve.
