Chicken Chow Mein

This was a dish traditionally made to use up leftovers so why not use yours! It tastes delicious and will suit all palates- add a chilli if you want an extra kick!

Serves: 4
    • 4 nests Blue Dragon Medium Egg Noodles
    • 2 tbsp. vegetable oil
    • 2 tsp. fresh ginger, peeled and finely chopped
    • 2 garlic cloves, crushed
    • 2 red peppers, finely sliced
    • 50g shiitake mushrooms, sliced
    • 8 spring onions, sliced
    • 2 chicken breasts, cooked and finely sliced
    • 200g Blue Dragon Bean Sprouts
    • 2 sachets Blue Dragon Chow Mein Stir Fry Sauce
    • To taste Blue Dragon Dark Soy Sauce
    1. Cook the Blue Dragon noodles according the pack instructions, until 'al dente' (i.e. they still have 'bite'). Drain and set aside.
    2. Heat the oil in the wok; add the ginger and then the garlic. Stir fry to allow the aroma to be released.
    3. Add the peppers, mushrooms, spring onion and chicken and stir fry for 2 minutes.
    4. Stir in the bean sprouts followed by the noodles.
    5. Add the Blue Dragon Chow Mein Stir fry Sauce and stir fry until heated through. Add Blue Dragon Soy Sauce to taste. Serve immediately.
